Tomato, Cucumber, Onion and Avocado Salad

This is one of my favorite recipes, not only because it is simple, but because I have so many memories of eating this at my grandma's house. She always served this salad with italian dressing and it was so refreshing on a hot summer day. Now I look forward to giving it to my daughter.


I actually hesitate to even call it a recipe since it is so simple and really the amounts of the individual ingredients are definitely preference based. Most of the ingredients are in the name. I have given ingredient quantities below, but the amounts of each are really a personal preference. I personally like a one to one ratio of the cucumber, tomato and avocado, with about a third as much onion. We always had italian dressing growing up, but now I like to experiment. For a healthy bottled dressing you can't go wrong with Primal Kitchen dressing. I tried their Honey Mustard last time and enjoyed it. And to make the simplest of healthy dressings, just pour on some olive oil and balsamic vinegar.


Right now I am enjoying these salads with fresh heirloom tomatoes and cucumbers from the garden. If you don't have that option I do recommend getting fresh local produce whenever possible. Try a local farmers market, or look for the local label at your grocery store. The tomatoes are just so much tastier!

Tomato, Cucumber, Onion and Avocado Salad

1 medium cucumber

1 large tomato or 10-12 large cherry tomatoes

Diced or sliced onion (about 1/8th of an onion)

1/2-1 avocado

Salt and pepper to taste

Dressing of your choice (Italian, balsamic and oil, honey mustard, etc)


Cut vegetables in bite size pieces. Toss in bowl with dressing and salt and pepper. Enjoy!
